Ingredients
Cheese bread
- 4 4 eggeggs
- 1½ tbsp 1½ tbsp ground psyllium husk powder
- 2 tsp 2 tsp baking powder
- 2 tbsp 2 tbsp chia seeds
- 2 cups (8 oz.) 475 ml (220 g) mozzarella cheese, shredded
Rutabaga fries
- 1 lb 450 g rutabaga, peeled and sliced into strips
- 6 tbsp 6 tbsp coconut oil
Halloumi burger
- 14 oz. 400 g halloumi cheese, sliced
- 1 tbsp 1 tbsp coconut oil
- 4 leaves of iceberg lettuce
- 1 (4 oz.) 1 (110 g) tomato, thinly slicedtomatoes, thinly sliced
- 1 (7 oz.) 1 (200 g) avocado, slicedavocados, sliced
- ¼ cup 60 ml sour cream
- ¼ cup 60 ml mayonnaise or vegan mayonnaise
- ¼ cup 60 ml ajvar relish
Toppings
- poppy seeds
- sea salt

Making low carb simple
Instructions
Cheese bread
Preheat oven to 400°F (200°C).
Use an electric mixer to beat the eggs until fluffy, about 5 minutes.
Combine the dry ingredients in a separate bowl. Add the shredded cheese. Then add the mixture into the eggs, stirring well. Let sit to swell and rise for 10 minutes.
On a baking sheet lined with parchment paper, spoontwo equal moundsof batter per serving. Bake on the middle rack of the oven for 10–15 minutes until golden.
Rutabaga
Keep the oven temperature to400°F (200°C).
In a medium-sized bowl, combine the melted coconut oiland rutabaga strips so that they are all coated with oil. Season with salt.
Place the strips on a baking sheet lined with parchment paper, or on a rack over a baking sheet. Bake in the oven until golden brown and soft inside (about 40 minutes), turning once while baking.
Burger
Combine sour cream, mayonnaise, and ajvar relish to make up the dressing. Chill in the refrigerator until ready to serve.
Fry the halloumi cheese in butter or coconut oil until golden and soft, about 10 minutes.
Build the burger and serve.

Ajvar relish is made from roasted red peppers. You could try a sun dried tomato relish/bruschetta or even guacamole if you wanted to avoid the tomato or pepper families altogether.
